Also, in observance of this august date (yes, august, not August; we know that it’s November), we have shared Emmett Lee Dickinson’s lesser-known poem “Cheeses! my Nacho fix” below (on the left). He was inspired to compose this poem shortly after sampling his third cousin Emily’s delicious concoction. His poem then inspired her to pen her poem, “Jesus! thy Crucifix” (below on the right).

Emmett Lee Dickinson was an aficionado of spicy foods, and he absolutely LOVED Emily’s culinary treat, Cajun nachos – the hotter the better! He once wrote, “If I eat a plateful and it makes my whole body so hot no winter wind can ever cool me, I know that it’s Emily’s nachos. If I feel physically as if the top of my head were taken off, I know that it’s Emily’s nachos. These are the only ways I know it. Is there any other way?”
